Peanut Butter Sandwich Cookie and Virtual Baby Shower

There’s no better excuse to get together than a baby shower. As a mother of two I can attest to the joy that a baby brings into the world and the excitement that goes around the big day. When Mardi from Eat Live Travel Write asked if I’d be willing to participate in a virtual baby shower for Jan Scott, author of Gatherings (with Julie Van Rosendaal) I could only focus on one thing- cookies. A bun in the oven means a dozen on a cookie sheet about to go in the oven, so I flipped through Butter Baked Goods by Rosie Daykin and drooled over The Peanut Butter Sandwich Cookie (page 64).

There’s nothing better than cookies in life, and when you glue two of them together with a spread of creamy peanut butter filling, well that is a recipe for success my friends. These cookies were a cinch to make and would be welcome fit to any baby shower spread!

I, too, am a cookie fiend. Love them. Wish they were a food group unto themselves requiring several servings a day. Good thing this party is virtual, otherwise I’d eat far too many and not leave enough for the others.

I’ve had this recipe bookmarked for a while now, but for whatever reason, I just haven’t gotten around to it yet. Thanks for the reminder to get up off my butt and bake these up… I don’t have any real-life baby showers coming up anytime soon, but I’m sure I can find an equally good excuse.
