Full disclosure. I’m not vegan, vegetarian or even pescatarian. And while I LOVE salads I’m not a huge lentil person (don’t tell Chef Michael Smith, I’m a little scared of heights!). But when I attended the launch party last month for Nettie Cronish and Cara Rosenbloom’s cookbook Nourish, from Whitecap, I was immediately struck at how easy and versatile these dishes were- and motivated to teach my two girls healthy eating- I was excited to introduce a new bumper crop of recipes, brimming with veggies and packing a nutritional punch, just in time for summer!
Summer for me means lingering around the BBQ and whipping up a salad to accompany whatever is on the ‘que! The Black Bean and Quinoa with Charred Corn jumped out at me- the flavours aren’t anything too crazy or new, but they came together in a brilliant and rather hefty salad- and one with limitless options! Bringing chunks of mango in the fold, the salad is sweet, zesty and with a little red hot chili pepper here, or a sliver of jalapeño there, you can adjust the salad to your tastes (or that of your 6 year old who is terrified of spice!).
Keeping in mind bathing suit season is fast on the approach, I buck dieting in general but am happy to cut carbs out a bit and eat a little leaner. This salad is satisfying enough on it’s own for a perfectly portable lunch, or as a side with a lean cut of meat.
What I loved most about the book is the intro chapter. How to cook lentils properly, benefits of a legume rich diet, and a complete nutritional breakdown of nuts and seeds. A line Cara mentions resonates with me, a quote from fellow dietitian Mary Sue Waisman- “People eat food, not nutrients” so I think I’ll spare my kids the nitty gritty on the why to eat this, or that, and instead focus my energy on getting them to eat what tastes good- an easy feat with this book!
